Peanut Butter Sandwich Cookies

Cookie Ingredients:

  • 2 cups flour

  • 1 teaspoon salt

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • 1 & ½ sticks butter, softened

  • 1 cup CB’s Fresh Roasted Peanut Butter (order below)

  • ¾ cup granulated sugar

  • ¾ cup brown sugar, packed

  • 2 eggs

  • 2 teaspoons vanilla

Filling Ingredients:

  • 1 stick butter, softened

  • 1 cup CB’s Peanut Butter

  • 1 teaspoon vanilla

  • 2 - 4 tablespoons milk

  • 3 cups powdered sugar

Directions:

Preheat oven to 350 degrees.

In a small bowl, whisk dry ingredients and set aside.

In a large mixing bowl, cream together butter and CB’s Peanut Butter. Add sugars and beat until fluffy. Mix in eggs and vanilla. Add the combined dry ingredients.

Using a rounded teaspoon of dough, roll into a ball and then into logs. Place on cookie sheet about 2 inches apart.

Using the tines of a fork, make a crisscross pattern in the dough and pinch the middle with your fingers to make a peanut shape.

Bake 8 – 9 minutes.  Allow to cool before filling.

Combine filling ingredients and spread onto half of the cookies. Then make a sandwich.
